Often the pizza crust is either vegan or gluten free, but not both. Although there are some gluten free restaurants which have a vegan menu. They have the advantage of appealing to a wider range of customer desires
But vegan gluten-free pizzas are also easy to make at home where we have the most control over ingredients.
For those times when you don’t have the time to cook the crust, you can purchase vegan gluten-free pizza crusts and you still get to add the sauce and topping.
Vegan Gluten-Free Pizza Crusts
A search of “vegan gluten free pizza cookbook” shows dozens of vegan gluten free cookbooks:
“101 Gluten Free Vegan Italian Food— Quick and Easy Vegan Recipes” by Jonathan Vine devotes the entire Chapter 1 to Gluten Free Vegan Italian Pizza, with 27 different pizza recipes!
This book describes how to make the crust, serving 4 to 8 slices:
Ingredients:
1 cup brown rice flour
1 cup white rice flour
1 cup tapioca flour
1 1/2 teaspoons instant yeast
1/2 teaspoon gluten free baking powder
1/2 teaspoon salt
1 1/2 cups warm water.
(Other types of crust appear in some recipes such as the Lentil Crust Pizza with Red Bell Pepper).
Directions:
To make the crust: In a bowl, mix the flours, salt, and gluten free baking powder.
Mix the warm water with the instant heat and let it bloom for 5 minutes.
Pour the water into the bowl over the flour and mix well.
Kneed for at least 5 minutes, adding more flour if the dough is too sticky.
Mix in the olive oil then cover the bowl with plastic wrap and set aside to rise, and room temperature.
When the dough has risen, flour our working surface well.
Roll out the dough using a rolling pin.
From this quantity, you can make pizzas.
Transfer the pizzas onto a baking tray lined with parchment paper.
Add toppings of your choice and bake in a preheated oven at 375F for 15-25 minutes.

Simple and Delicious Vegan by Michaela Vais shows variations of the crust recipe:
YEAST MIXTURE
3/4 cup + 2 Tbsp (200ml/7.1 oz) warm plant-based milk
1 ½ tsp active dry yeast
1 tsp olive oil
½ Tbsp (10g/0.4 oz) maple syrup or agave syrup
DRY INGREDIENTS
1 cup (160 g/5.6 oz) white rice flour
½ cup (60 g/2.1 oz) tapioca flour/starch
1/3 cup (40 g/1.4 oz cornstarch or potato starch
2 tsp psyllium husk powder
1/3 tsp salt
Instructions
Heat the plant-based milk in a saucepan to lukewarm. Add the yeast mixture. Set aside for 5-10 minutes to activate the yeast until frothy.
Combine the dry ingredients in a bowl and stir with a whisk.
Add the yeast mixture and stir with a wooden spoon. The dough will seem less wet within a minute.
Knead the dough with your hands for a few minutes. Then form a dough ball and place it back in the bowl. Cover the bowl with a clean damp kitchen towel and set aside (in a warm place) for about 40-60 minutes until it’s risen.
Preheat the oven to 390ºF (200C).
Place the dough onto a parchment-lined/greased baking tray and use your fingers to spread it into your preferred pizza shape. Allow it to rest for 10 minutes, preparing all the toppings in the meantime.
Top with tomato sauce (and other toppings you like). Bake in the oven for 10-15 minutes. Add dollops of vegan mozzarella on the pizza and bake for another 10-15 minutes (or until golden and crispy), optionally top with fresh basil, and enjoy!
If you’re feeling lazy like we all are sometimes, you can purchase vegan gluten-free pizza crusts and just add your sauce and toppings.
